Pineapple Bronx – Recipe from the ‘Old Waldorf Bar Guide’

Shake with cracked ice. 

1 part Italian Vermouth

1 part Pineapple Juice

6 parts Gin

I’m beginning to realise I rarely like pineapple juice in drinks, or that it needs a more careful application than this. I’m not sure if it needs more sweetness to bring the flavour out, or acidity to give it more presence, either way in this kind of set up the drink merely tastes weak, and the juice in my mind tastes ‘off’. I often find mixing booze straight with fruit juice doesn’t work for me, it always tastes like there’s something wrong with the juice, which is perhaps because when young I used to drink a LOT of fruit juice?

Knowing when pineapple as a juice became popular I wonder if this drink was a prohibition era ‘hide the bad booze’ type of cocktail, regardless this doesn’t get my vote, even with the addition of some of Old Curiosities wonderful gin.
