September Morn – Recipe from the ‘Old Waldorf Bar Guide’

Juice of one Lime 

One jigger of Bacardi Rum 

White of one Egg 

Color with Grenadine 

Frappe well; serve in claret glass

Rum Clover Club anyone? This is a simple adaptation of that classic recipe, switching lemon for lime and rum for gin. The proportions for the above are a little askew, its needed a little more sweetness so I added some sugar, leaving the grenadine just for colour, and swapped out the egg white for 15ml of aquafaba. The rum-ness gets a little lost, Bacardi being a lighter style already it’s flavour doesn’t really peak through the other ingredients. This could be a better drink with a aged rum, perhaps a nice 5-7 year old?
