Blossom – Recipe from David Embury’s ‘The Fine Art of Mixing Drinks’

Shake with cracked or crushed ice. 

1 part Pineapple Juice 

2 parts Lime Juice 

8 parts White Label Rum

There are several drinks I’ve come across in this book where the proportions look guessed, and the drink doesn’t really seem tried, this is one of them. It looks like Embury, in order to fit the drink into his magical 8-2-1 recipe has just inserted the ingredients. Making it with these ratios just ends up with an incredibly acidic mouthful of lime juice, it completely overpowers the pineapple and really leaves very little else to taste. I used plantation 3 star which has a decent amount of presence but even this was lost in the drink. I tried it with the addition of 10ml of sugar syrup which was unfortunately too much (I ignored my own rule of ‘always add less sugar than you think you’ll need’ somehow – it was late I guess), it did bring out a little more of the pineapple and balanced the drink better, in hindsight, and after a good night’s sleep, this drink might work if you swapped round the two juices, so 2 parts pineapple and 1 part lime, yet another project for another day.
